My great aunt gave me this recipe and we love it! I eat pancakes with peanut butter and so this is like breakfast and lunch..all in one!
Aunt Elaine's Hearty Pancakes
INGREDIENTS
1 1/4 cup Whole Wheat Flour
3/4 cup corn meal
2 T. Wheat Germ
1 T. Baking Power
---
1 1/2 cup Milk
1 egg, beaten
1/4 c. evoo
DIRECTIONS
Heat griddle to medium high heat. Mix dry ingredients and moist ingredients separately. Once mixed, combine. Add water or more milk until desired thickness. Pour onto griddle and flip when bubbles appear on the sides and in the middle.
Lauren and Richard came to visit and enjoyed these with us for breakfast! Or at least they told me they were enjoying them! Taylor eats them with jelly.
I can verify that Aunt Elaine's (my little sis's) pancakes are SCRUMPTIOUS! It's really fun to realize that you are actually eating very healthy food and enjoying it SO MUCH!

Aha! I caught you! Actually, your grandma gave me the link to this blog so that I could see these pictures and this recipe for myself! I actually caught someone using my recipe!!!! :) You might recall that it is modified from the recipe I found on the canister I got from my own grandmother, Avery Slaughter Pinkerton, who would be your great-great grandmother!
